July newsletter


Welcome to the Urban Reef summer newsletter....

It's here, it's actually July, fully fledged summer and we've had heaps of good weather too... is this really England!, well I guess we did get knocked out the footy and miss out on Wimbledon so at least some comfy familiarity remains.

Anyway, in this month's newsletter we introduce you to lovely 'Danny the Drink' (yes friend of lovely Nick, Kay, Lauren and Janusz) in 'meet the team'; we introduce you to Nic, Joy & Megan (our first Dog!) in 'Meet the Customer'; to celebrate amazing British strawberries we have a great tart in our 'tummy' feature; a sandcastle competition for big and small kids alike; we introduce you to master strawberry grower Dan Tanner in 'our friends' and end it all with a delicious summer fresh berry cocktail in 'Hiccup'.

The next 30 days

Summer is here

Summer is here, so as so many of you are flocking to our lovely beach we thought it was about time that we provided you with some lovely Urban food whilst you were perfecting your tan.

You can now take away filled ciabattas made by lovely Kay and lots of scrumptious salads then wash it all down with our homemade lemonade. We are even making children's lunchboxes to save you time in the morning so you can get to the beach quicker! Look out for our BBQ boxes filled with lots of local meats to sizzle in the sun and picnic bags to take down to the beach with you. We do the hard work so you don't have to...

If you fancy making up a posh picnic the deli can help you out, with cheese and biscuits, olives and lots of snacky nibbly bits to tempt you. We also have our Urban BBQ running all weekend where you can feast on New Forest burgers and hot dogs, with the sand between your toes!


Strum, strum, hum, hum...

As well as our regular Wednesday music slot, which moves to the deck when the beautiful weather permits for the summer, we also have some lively weekend deck music on the go. You can check here for latest updates. Future acts booked in already include Phil Dewhurst, Paint It blue, Fiona Fox, Pachango and Hannah Robinson. Wow, that really is a great line up even if we say so ourselves.

Meet the team


Danny has been with the Urban team for over 3 years, having started at the beach and recently moved to the reef. He's a fully fledged member of the family after so much time! Danny's constant happy banter is refreshing on the coldest of winter days. You might think you want a nice cup of tea, but two minutes picking Dan's booze obsessed brain and he'll be tickling taste buds you did not know you had in a much more exciting style. Next time you see him, just ask for a recommendation and you'll be addicted to some Danny passion too forever more.

Training - Studied Psychology in Cracow before oddly joining the army! And perhaps even more oddly choosing Bournemouth for a 'bit of a change'. Intensive passion injecting at the Urban Beach has made him the cocktail legend he is today. Recently marrying an 'Urban' customer no less, he will do anything to keep the customer happy, well not anymore, cos he's taken, but you get the idea.

Did you know - That Dan's real name is Arkadiusz Danielski (surname) That's where DAN came from!

Meet a customer

We love Boscombe, and having made it our home for the past four and a bit years we really want to recognise the amazing local community who make this place diverse! Each month we'll introduce you to a couple of our lovely customers, who as a thanks for being special will also get dinner for two on us. This month let me introduce you to:

Who: Nic & Joy Langlois, and of course Megan the Border Collie (who particularly enjoys a bowl of water as she sits on the deck keeping an eye on the surf!).

Love: Local residents Nic & Joy have got an immense amount of Boscombe Love and constantly pinch themselves thinking what a gorgeous place this is to live. You may well have seen Jess (the landrover) and some other church colleagues delivering food, blankets and company to those people who live here and are in need of such goodies... now that's some proper Boscombe love!

Like the Urban Reef because: (Over to them...) 'Well... who wouldn't? To keep the list short, lets just say that it has an awesome ambiance, fab location, happy staff, locally sourced (and therefore the best) ingredients, and a menu to die for. All in all, definitely worth a visit - See you there!' (argh, thanks, you're lovely too xx).

What's in your tummy?

Strawberry tart

Right, you lovely foodies... strawberries are beautiful, British, in season and available locally from our friends this month at Sopley Pick Your Own... the same ones we stock in the restaurant. So this month, we have a great strawberry tart for you to try that has proved very popular on our specials board during the past couple of weeks. Quite a lot of components to this month's recipe to get you a bit more challenged too. Good luck and send us any photos of how you get on, or even better drop us in a sample!!

Pastry Cream - Ingredients

Half litre milk
100g sugar
1 Vanilla pod
40g custard powder
4 egg yolks

Pastry Cream - Method

Boil 300ml of milk with the sugar and vanilla.
Mix the rest of the milk with the custard powder and egg yolks.
Stir mix into boiling milk.
Bring back to boil and then put into container and chill for an hour.

Sweet pastry - Ingredients

150g soft butter
94g icing sugar
Zest of half lemon
30g ground almonds
2g salt
1 egg
250g flour

Sweet pastry - Method

Blend butter and sugar.
Slowly fold in the egg.
Add all the other ingredients and lightly bring to pastry consistency.
Bake blind at 180 degrees centigrade for ten minutes and then leave to cool.

Chocolate Mousse - Ingredients

50g dark chocolate
100g double cream

Chocolate Mousse - Method

Melt the chocolate over a Bain Marie.
Whip cream until it reaches "soft peaks" consistency.
Add half the cream to chocolate, fold through and then fold through the remaining cream. (This stops it going grainy chef's tip)

Raspberry Coulis - Method

Add fresh raspberries to a little water and sugar.
Cook for a minute or two in a saucepan.
Add sugar to your taste.

Assembling the tart

Fill case with pastry cream.
Place cut strawberries on top and dust with icing sugar.
Place mousse on plate making a slight hole to place coulis in and finish with an ice cream of your choice.

Oohh, a competition...

Sandcastle competition

The summer is approaching, its time to dust off your Bermudas, grab a bucket and spade and run in your best David Hasselhoff style down to the beach.

And as a treat for playing in the sand we'll buy dinner for 2 for the best sandcastle! Send us your photo of the biggest and bestest sandcastle to competition@urbanreef.com. We want flags, turrets, a moat, drawbridge and little knights jousting in front. (Well you don't need to go that far!) but the crew here have made one as an example. Any excuse to behave like kids for the day, you've got to love working on the beach!

Last month's winner

The winner of last month's "Give our Chef a Hand" competition is Rosie Hawkins who helped out our lovely and very busy Head Chef, Janusz. Rosie came up with a delicious Mediterranean Tart recipe that could be slightly adapted to make use of all the delicious seasonal vegetables available at the moment and put on our Specials Board to be enjoyed by our lovely customers. Well Done and thank you Rosie! A meal for two at Urban Reef is yours for the taking.....!

Sopley and Cat and Fiddle Pick your Own

We work with some great local suppliers, and each month we try to introduce you to one, so that you can love them too.

This month we would like to introduce Sopley and Cat and Fiddle Pick your Own. Dan Tanner started out way back in 1976, he planted his first raspberries that year in Sopley. After some successful growing he decided to expand and began planting strawberries and currants. His now ever expanding crop is some of the most sought after produce in the local area, especially by us!

His Sopley farm is irrigated from the local lake so he doesn't get too many hosepipe bans!

Dan has over 35 acres of strawberries (I wonder how many jars of jam that would make!) Its not only strawberries, but oats, cereals, wheat and barley.

And of course you may recognise the name Tanner; he is our lovely Baker's uncle. So we had to find out what his favourite cake is.... coffee and walnut is the answer.

Did you know that on his land in Burley you can go on a deer safari!? Get pulled around by a tractor, feed the deer and hear all you need to know from your very young guide (still in junior school!) then finish it all off with a BBQ! Urban Reef's next night out I think!

Urban Berry Julep

You have to make the most of the British summer berry season, and you can't just eat them all, so let's drink a few too. This is a great, fresh, refreshing seasonal berries and English mint cocktail topped up with American Bourbon no1. Come and taste one at the Reef and then make your own back at home with our handy instructions below:


50ml Makers Mark
Mixed berries
8 Mint leaves
Crushed Ice
1 tsp of sugar

How to make it:

Put a small handful of mixed berries into the bottom of a wide mouthed glass (we use a frozen pewter vessel). Then add 2 teaspoons of caster sugar and 8 mint leaves. Using a muddler or the rounded end of a rolling pin, gently press down on the mint and fruit to break down the cell walls which releases all the flavoursome oils. Don't press too hard as you don't want to rip the mint leaves. Now add 50ml of Makers Mark Bourbon. Next fill the glass to the rim with fresh crushed ice and gently mix the drink with a long spoon. Garnish with the tip of a mint sprig and serve.

A very refreshing drink thats great on a warm summers day.

Tip - If you want to make for you guests in advance, prepare all the mix leaving the addition of crushed ice until you are ready to serve. In fact the longer the liquid, sugar and fruit parts steep together, the better the flavour of the drink.
