Meet the team

Chilled Chilled Dave has become an Urban Legend during the past 12 months or so. There one minute, gone the next, back again, gone again. Sometimes we wonder if he's real, but travels beckon and we respect Dave for having given up the suit and living a somewhat more holistic existence. A thoroughly nice chap! Born in Dorchester, grew up in Brussels. Returned to UK to study music and Business in 1999 at university.

Training - Having been born in the UK, but bought up in Brussels, Dave returned to the UK to study music and business at Uni in 1999. Then trying to be a grown up spent 5 years in sales and account management with GlaxoSmithKline. Finally he saw the light, gave up the suit and tie, grew his hair and travelled for 18 months.... The all new Dave then retrained as a photographer and set up PhotoSyms Ltd in 2010, specialising in wedding photography, www.davesymsphotography.com.
Favourite Food - Lamb Dansak curry... bring on the spice!
Favourite drink - Gin, Ginger beer and lime... the 'Shady Grove'... and urban 'under-rated legend'... that I have done my best to introduce across the Alps!
Did you know - whilst working as a ski guide, Dave fell 200m in an avalanche... on the plus side, no one was following... on the bad side, my tips were a little down that day.

Dave recently photographed all the Xmas shots that we used on our website during the festive period and having seen him both behind the bar and behind the lens we can't recommend Dave enough for any photography projects you might need. Unflappable with a great ability to pick up exactly what you are looking for from a project check out his website for some inspiring images!

Meet the Urban team

Meet a customer

We love Boscombe, and having made it our home for the past four and a bit years we really want to recognise the amazing local community who make this place diverse! Each month we'll introduce you to a couple of our lovely customers, who as a thanks for being special will also get dinner for two on us. To nominate yourselves please email community@urbanreef.com and let us know what you like about Urban Reef, Boscombe and life in general xx

Jayne and Chris, a married couple from Berkshire, now the proud owners of a weekend retreat just moments away from the Urban Reef! It's taken nearly half our lives to discover beautiful Boscombe but we finally stumbled upon it on a summers day in 2008. It didn't take us long to realise our dream of finding our own holiday place and our completion coincided with the opening of the Urban Reef!

This month let me introduce you to:

Who: Jayne and Chris – a lovely married couple from Bershire who are now the proud owners of a weekend retreat just a few moments aware from Urban Reef. How very wise!

Love: It took half of their lives for Jayne and Chris to stumble across Boscombe one 2008 summer's day and it did not take them long to decide this was the place to set up a regular bolt hole. The opening of the Urban Reef was simply the icing on the cake! They love walking down Sea Road and seeing Boscombe seafront for the first time on a glorious blue sky day. Truly one of life's magical little moments.

Like the Urban Reef because: (Over to them...) 'Because the food is fantastic, the staff very welcoming and the location simply stunning! Whether it is drinks on the decking or a delicious meal in the restaurant the Urban Reef always delivers a great experience. Thank you guys for your great contribution to our 'dream' and congratulations on all your success'(Well, we’re blushing again, but thanks for being such loyal customers and please do enjoy a night on us by way of thanks xx).'

What's in your tummy?

Beetroot and Barkham Blue cheese soufflé served with polenta

Heh, it's New Year so you're all being healthy and stuff right? Well this little treat is not too bad, excuse a bit of cheese and a smidgen of butter, but life's short ;). But no meat, and we're always getting asked for interesting veggie dishes so please give this one a go and let us know how you get on.

Polenta ingredients

1 ltr of water
250g of yellow polenta
4 tbsp butter
Salt to taste

Heat the water on a high heat for about 5 minutes. Add the polenta, quickly whisking until fully incorporated.
Lower the heat, add the butter and allow the polenta to cook for 30 minutes, stirring occasionally.
Add salt to taste.

Beetroot and Blue cheese soufflé

4 free-range egg yolks
85g cheese, crumbled
2 free-range egg whites, whisked until stiff peaks form when the whisk is removed
2 tsp corn flour
15g or ½oz of butter
1 tsp olive oil
1 cooked beetroot
Freshly ground black pepper

Preheat the oven to 200C/400F/Gas 6

Mix the egg yolks with the blue cheese and fine chopped beetroot in a bowl.

Add the whisked egg whites and corn flour and gently fold into the mixture.

Heat the butter and the oil in a 20cm/6in ovenproof frying pan, until the butter is foaming. Pour the cheese and egg mixture into the pan and transfer to the oven to bake for 8-10 minutes, or until puffed up and cooked through.

Sprinkle with black pepper and serve immediately.

And to finish things off, serve with some homemade tomato chutney from our deli too!

Oohh, a competition...

Your worst Christmas present

We thought the perfect competition for January would be for you to tell us all about your worst Christmas presents you have received either this year or before. Don't worry you can appear nameless so as to not offend any relatives! One of our good friends received a 'Set of egg cups' this year and thinks he's going to win. Were sure that somebody must be able to better that, so take a photo or tell us about it and win a dinner for two. Easy!

Send your photos or story to competition@urbanreef.com and as usual we'll buy dinner for 2 for the winner... what are you waiting for?

Some of our bestest friends

Dave the egg man

Each month we like to introduce you to one of our lovely lovely suppliers who help us provide you with the very best local produce that we can mutually find and create. This month let's meet 'Dave the egg'.

Dave is our local egg man, he provides us all the eggs that are used in Kay "the cake's" baking, in our giant Yorkshires and as the main feature in our Surf's up and eggs Benedict brekkies. Dave owns Flambards Eggs on Silver Street in Hordle. He can talk to you for days about his hens, he loves them and we love their eggs! I assure you very few people in the world would know more about happy hens than Dave. You want to know why scrambled eggs are better in summer and poached eggs in Spring... then Dave is your man!

This may seem strange with the wonderful array of local products that are now available, but genuinely one of the ingredients we value most is Dave's eggs. Such an important ingredient and well worth paying for. We know when buying from Dave that the eggs have generally been laid within the past 24 hours, and that is a wonderful thing. Pick some up next time you are in the deli and you really will 'taste the difference!'.

Whiskey Ginger Julep

Who saw The Apprentice final? A spice infused bourbon called "Urbon". It's as though it was designed for us... incorporating that idea but with an Urban twist, comes our monthly "hiccup"... A fresh ginger and orange refreshing Bourbon drink. Bourbon's a great warming drink for winter, and ginger and orange really lift it to provide just a smidgen of hope that spring does cometh!

Fresh ginger
Brown sugar syrup - 37.5 ml or sugar sachets x 2
1.5 shots (37.5 ml) Bulleit Bourbon Whiskey
Soda water
Twist of orange peel to garnish

How to make it:

Muddle the fresh ginger in a glass.
Add either the brown syrup or sugar sachets (if using sachets add a splash of soda to dissolve the sugar)
Add the Bourbon, ice and stir.
Top up with soda water and stir again.
Garnish with a twist of orange peel (hold over glass and twist and orange taste will infuse into drink)

Or come along to our next Jonothan Cotton Music Night on 30th January and we will enjoy making it for you as our music night bartender's gift.
